The New Normal – Baking As A Coping Mechanism – Baked Apple Pies

We had a lovely roast dinner on Sunday, and I really fancied an apple pie for dessert. With a handful of apples in the house and a frozen sheet of puff pastry (the lazy girl’s method, I know!) I decided to have a go at my slightly clumsy attempt at baked apple pies!

Ingredients:

  • Three apples
  • One teaspoon of cinnamon
  • Two teaspoons of sugar
  • One sheet of pre-rolled puff pastry
Ready to be served!

I grabbed my apples, we just had some rather petite gala apples in, but anything will do. I cored and peeled them before rolling them in a cinnamon and sugar mixture. Then I took my sheet of puff pastry (which I had left to warm to room temperature before using) and using a sharp knife I carefully sliced it into rough strips which I then wrapped around each apple. It ended up using about two strips per apple, and you could easily do six apples with one sheet of pastry!

Then I just popped them in the oven and let them do their magical puff pastry baking thing for around 45-minutes, or until the puff pastry looked suitably puffed up and brown. I left them to cool a little before serving, and we had a little vanilla ice cream on the side. However, these would be delicious with custard too. Were I to make them again, I would stuff the middles with some sultanas or raisins, to go for the real classic baked apple dessert. Yum.
